I had been holding on to some cherry wood from one of my trees, waiting for perfect blade to pair it with. Well, the wait was over when I met this 165mm Santoku. Hand forged from Aogami Super Blue steel, with hand hammered finish. Aogami Super Blue is about the best steel to forge a kitchen knife from, super hard, and immensely sharp, it's my favorite!
