These extra small Santoku knives measure 110mm and they are fun little choppers. Super comfortable to use when you are preparing small items that don't require the heft of your full-size Gyuto. Hand forged from White #1 steel, they are extremely sharp! They are treated with a traditional Kurouchi black finish on the blade for protection, as the blades have a lower degree of corrosion resistance from being a high carbon steel, as opposed to, a stainless steel. Drying the blade in between use is always recommended. These knives make fun, as well as, quick work of herbs and veggies!
